CIABATTA BREAD AND TERIYAKI BEEF

If you like a crispy, cruncy crust on bread, buy one of those *bake at home* loaves of chiabatta bread.  It's kind of flat (only a little over an inch thick) but it's wonderful for sandwiches.  The Beast had never had any before but he sure enjoyed it tonight.

He was in a cooking mood so he made some macadamia nut cookies (delish!) and we had a kind of teriyaki stir fry over rice for a late lunch.  I wanted him to add the veggies to it but all he put in was some green pepper, onion and pineapple tidbits.  But it did taste good to me.  Of course, I was hungry...lol.

Later he baked the ciabatta bread and I cut it into four pieces, cut it like a pocket with the pointy end up and filled it with the beef that was left over from lunch.  I didn't have to clear any pineapple because between me and the Beast, we ate all the pineapple...lol.  Besides, it's good for your digestion.  The beef was incredibly tender and the bread was so crunchy.  Even tho' I had put some of the *gravy* in the *pocket*, nothing leaked out.  That's the best part of having a nice crusty bread.  You would have to be a very slow eater for anything to leak.  I didn't rush but nothing leaked any way.

I spent the day organizing my computer room and that included moving my pajamas, underwear and socks into the covered bin to keep handy for when I take my shower.  There was plenty of room for all I had and I even found some socks I thought were lost or I had thrown out.  I wasn't really sure what happened to them but they were at the bottom of my clothes basket.  It now has all my shoes, boots and slippers in it.  I started on clearing up some of the regular bookcase and the Beast complained because I moved this one instruction book of his.  I laughed and said...*What?  I moved it maybe  5 inches and you can't find it?*  Even he laughed at that because that was true.  I will finish up the room tomorrow.  I have to straighten up my DVD bookcase and I am not looking forward to that!

I will move my desk and clean the window behind it and then vacuum my rug to see if I need to clean it yet.  If so, I will do that on Thursday when the Beast is gone most of the day with his friends from church and then for his church meeting in the evening.  He annoys the hell out of me when I am trying to do something because he considers himself the *expert* in the house now.  I know he had to take over the household when I had my first leg surgery and I hadn't been healed long before I had to have the second one done.  But he has a lot to learn.  I had to show him how to iron his dress shirts.  He used to do it when he was a kid (I always did it for years after we got married but, c'mon!  How can you forget how to iron???  He is so vain about his appearance when he goes to church or to any special function.  I would hate to have to compete with him.

He bought me a lightweight jacket to wear on days when my parka would be too warm and cumbersome.  I was surprised.  It's a nice jacket even tho' I know he got it in the mens department.  It works.  It's actually the perfect weight.  Has a light lining in it and I love the pockets.  Not that I really use them for anything but cough drops at times and kleenex but they are nice and deep, unlike a lot of women's jackets.  I don't understand how he can be so thoughtful at times and such a shit at others.  I DID finally mention to him that this last time I was sick was almost as bad as when I had the flu three years ago.  I told him that I didn't care about no food because I didn't really want any but....I really could have used some ice water several times.  He actually looked embarrassed.  He told me he DID check on me from time to time.  But I know it was only to see if I was dead or alive.  LOL!

Some good news about my brother, David.  He's doing much better now that they got the ammonia out of his system (and whatever else they had found).  He was aware, knew who my sister Bee was and was even able to feed himself although he complained about the pureed food.  He couldn't understand why it was all they were feeding him.  My sister had to explain it to him, including the fact that they were afraid he would choke on regular food.  His kidneys are working good but he is still weak.  Bee told him if he worked hard on getting his strength back, she would take him to her daughter's house for Thanksgiving.  He liked that idea so we shall see how well he does.

Buttmunch emailed me and wanted my recipe for nut cups.  She's going to a friend's house for Thanksgiving and her friend insists she wants to do all the cooking herself.  But Buttmunch knows people love the nut cups and that's something she can make ahead of time and bring for another dessert.  I emailed the recipe to her and she texted me this...*You rock!*  LOL..nut!

I have to get my minature muffin pans from the Princess so I can make some of those, too.  I'm not sure who is having dinner at their house (either Tara or the Princess) and nothing has been said about what I can bring/make.  So I will make nut cups and bring some wine regardless of who is having it.  Hmmm...maybe I will pick up some Bailey's too....great in coffee *grin*!  I do remember the Princess saying something about Johnnycake's family having their dinner on Saturday this year.  I'm glad.  That means they don't have to worry about eating two meals in one day...LOL.  Maybe I can bring Chewlee home with me afterward to have a sleepover.  I miss the little stinker.

We won't be hit bad by the arctic weather front until Wednesday night.  It's going to be really cold and miserable.  Even the day time temps will suck.  Gotta pull up my big girls pants and make sure I have all my winter jammies handy.  Bless you, Princess for the bootie slippers.  I will be using those for sure!  I'm going to hate when those wear out.  I haven't seen anything like them if/when they do.  But with Publix opening next week, they might have the pink fuzzy ones I liked buying for Xmas presents.  If they do have them, I may buy me two different colors and put them away until I need them.

Love you all.  Please keep warm and have a great work week (if it applies).  Drive carefully if you live in an area that got snow.  Poor Minneapolis!  They really got hit and so did Chicago.  Gee, what a surprise THAT is!  That has to be the earliest in many, many years that snow has shown up this early, however.  Be good.  ***Hugs***
