The Weather Stunk But I Had A Good Day....
Overcast, rainy (sometimes it rained HARD) and cold. Not a good day for going outside although, when the rain was just a slight mist, I did try to get Baron to go out since he had been up for several hours without going outside to pee. BUT...I made my chicken and rice dish today. It was actually a modification of one I used to make when I had less time to spend on making meals (when my kids were still home). Plus, over the years, I have learned more about the taste and use of spices in food so I rolled up my sleeves shortly after the Beast went to church.
I cut up the onion, green onions (with tops), celery, green pepper, fresh cayenne peppers (courtesy of Dennis and Diane's garden in their *barn*), chopped the garlic, cut the chicken tenderloins into bit size pieces and then started. I browned the chicken in my Dutch oven, put it aside and then threw in the garlic and onions, I added the rest of the veggies and let them simmer with the lid on for a few, stirring often. Then the finish was adding the rice, the chicken and the chicken broth. After letting it simmer for a while, I tasted it and added the additional salt and pepper, to taste.
It was low-sodium chicken broth (the Beast never reads the labels!) so it DID need more salt and a touch of dried cayenne pepper to give it a bit more snap without making it too spicy. I let it simmer for an hour and it was ready when the Beast got home. Although I had told him I was going to make it, he walked in, smelled the food and asked me what I was making. I just shook my head and told him. He said it smelled great! Since he ate two bowls of it (he hadn't eaten breakfast) and then ate some again for dinner, I guess he meant it. I know when I tasted it after it was done, I felt it tasted even better than it smelled....LOL.
Talked to Marcus Aurelius today and his promotion was announced at work on Friday and it came with a nice raise. We knew it was coming and he knew which worker was going to be very upset over him getting the position. The guy really felt HE should get it on the basis of how long he worked for the company in comparison BUT he doesn't get the fact that it's not just seniority that counts. It's so many different things. Knowledge, how you handle criticisms, how you handle customers (and you definitely never call the boss up with complaints after you have been drinking a lot). Hell, you don't do that after drinking a little! LOL. What an idjit! My son thinks the guy may quit or stick around and try to throw him under a bus somehow but Marcus is too smart for that. The guy already tried that once and it backfired on him...big time! I guess he thought his boss was stupid.
I was really a bit upset today after we turned our clocks back. Is it just me or is the sun setting even earlier than what time it should have set??? It was not long after 4:30pm and I looked outside and it was dark!!! It made me feel like it was much later than it actually was and even the Beast commented on it when he went to take Baron out before he jumped in the bathtub. He was shocked! He had to check the time before he believed it was dark so early. He doesn't get home from church until a little after noon and he knew he hadn't been home all that long. How does this help anyone?
Well, I need to jump in the shower and get myself ready for bed. The Beast just decided he was heading there and I'm a bit tired, too. Love you all. Be careful driving tomorrow. Take care of yourselves and dress appropriately for your weather. I love you all. ***Hugs***
